Alyssa’s Garlic Mashed Potatoes

Two easy ways to make perfect potatoes.

Ingredients

3 lbs. red potatoes

4 tbsps. butter

8 oz. sour cream

1/2 cup whole milk

1 tbsp. minced garlic

Garlic powder

Salt

Black pepper

Directions

1. Cook the potatoes using either the stovetop method or Instant Pot method.

Stovetop method

  1. Chop the potatoes into quarters. Place them in a large pot and cover with water until just about 1 inch above the potatoes.
  2. Bring the potatoes to a boil over high heat, then reduce to medium-high.
  3. Cook for 10-12 minutes until the potatoes are easily pierced by a fork.
  4. Drain the water and transfer the potatoes to a large bowl.

Instant Pot method

  1. Place the metal rack at the bottom of the Instant Pot.
  2. Add 1 cup water, then place the whole potatoes on the metal rack.
  3. Cover the Instant Pot and set the vent to the seal position. Set to pressure cook or manual for 8 minutes.
  4. Once cook time is up, quick release by turning the knob to the vent position.
  5. Once the float valve has dropped, remove the lid, drain the pot, and transfer the potatoes to a large bowl.

2. In a large bowl, combine the hot potatoes with butter, milk, sour cream, minced garlic, and garlic powder, salt, and pepper to taste.

3. Use a potato masher or hand mixer to mix your potatoes until smooth.

4. Taste and add additional salt and pepper if needed.
