Kelsey’s Irish Soda Bread

Four ingredients, one bowl, and a whole lot of goodness.

Ingredients

  • 4 cups all-purpose flour
  • 1 tsp. fine sea salt
  • 1/2 tsp. baking soda
  • 1 1/2 – 2 cups buttermilk
  • High-quality butter

Directions

  1. Preheat the oven to 400 degrees. Line a sheet pan with parchment paper. In a large bowl, whisk together the flour, salt, and baking soda. Make a well in the center of the dry mixture and pour in 1 1/2 cups of buttermilk.
  2. Using your hands or a spoon, mix the ingredients until a loose dough forms. It should be soft but not overly sticky or wet, holding together enough to make a loaf that holds its shape on the sheet pan. If your dough is dry and crumbly, add an additional 1/2 cup of buttermilk – one tablespoon at a time – until it comes together.
  3. Once the dough has no streaks of flour or buttermilk, transfer it onto the parchment-lined sheet pan. Using your hands, form the dough into a round that’s roughly eight inches in diameter. Cut a large “X” across the top of the dough using a paring knife. Bake for about 45 minutes until your soda bread is nicely browned and sounds hollow when tapped on the bottom.
  4. Let your delicious loaf cool until just warm, then slice and eat with good butter. To store, wrap it in a slightly damp tea towel to prevent the crust from getting too hard, and keep your fresh bread on the counter.
