Montani’s Simple Grilled Pizza

Make your favorite delicious, crispy, chewy pizza from the comfort of your backyard!

Ingredients

  • 2 1/4 tsps. active dry yeast
  • 2 tsps. granulated sugar
  • 1 1/2 cups warm water
  • 5 tbsps. olive oil
  • 1 1/2 tsps. salt
  • 1 tsp. white vinegar
  • 3 3/4 – 4 cups bread flour
  • Your favorite pizza sauce
  • Your favorite pizza toppings
 

Directions

  1. Using a stand mixer, combine 1/2 cup warm water with the sugar and yeast. Stir to dissolve the yeast and let bloom for five minutes.
  2. Add the remaining cup of warm water, 3 tbsps. olive oil, salt, and vinegar.
  3. Mix on medium-low speed, gradually adding the flour. Once combined, knead the dough until it’s smooth and elastic. The dough should be a little sticky but shouldn’t stick to your fingertips when touched.
  4. Cover the bowl with a dry towel and allow to proof in a warm place until doubled in volume – about 1 to 1 1/2 hours.
  5. Punch down the dough and place it on a lightly greased or floured countertop. Divide dough into five to eight equal pieces, depending on how thick or big you want your pizza.
  6. Roll and stretch out the dough to your desired size and thickness. Place each finished crust onto a piece of parchment paper.
  7. Preheat grill to 425 degrees. Make sure it’s well cleaned and oiled.
  8. Brush the prepared dough with remaining olive oil, then lift the parchment and carefully flip the crust onto the grill with the oil side down. Peel the parchment paper off.
  9. Cover grill and cook for two to three minutes. Check for doneness with tongs to see if the bottom side has grill marks and is golden brown. Flip pizza crust onto a plate and add your favorite sauce and toppings to the cooked side.
  10. Lower the heat slightly and slide your pizza back onto the grill to cook the bottom side for three to five minutes. You’ll know it’s done when the cheese is melted, and the crust is golden brown. Enjoy!
