Sweet Beet Cookies Recipe

Sweet Beet Cookies


  • 1 cup all-purpose flour
  • 1/2 tsp. baking powder
  • 2 tbsps. sugar
  • 1/4 tsp. salt
  • 1/2 cup RAW fine shredded beets*
  • 2 tbsps. oil


1. Preheat oven to 400 degrees.
2. In a mixing bowl, whisk together the flour, baking powder, sugar, and salt.
3. Using your hands, toss the shredded beets in the flour mixture to coat.
4. Add the oil and bring the dough together until smooth.
5. Form the dough into a flat disk and roll out to 1/2 inch thickness.
6. Cut the dough into squares or decorative shapes.
7. Bake on a parchment-lined cookie sheet for 15-17 minutes.

*Canned beets will not work because they are already cooked and too thick.
