Jennifer’s Apple Spiced Pancakes

Start autumn with a fluffy, flavorful treat.

Ingredients

  • 2 cups all-purple flour
  • 2 tbsps. baking powder
  • 1 ½ tsp. ground cinnamon
  • 1 tsp. ground ginger
  • ½ tsp. salt
  • 2 eggs
  • 1 ½ cups milk
  • 1 tbsp. maple syrup
  • 2 gala apples, cored and grated
  • ½ cup chopped pecans
  • Maple syrup and fresh fruit to serve

Directions

  1. In a large bowl, whisk together the flour, baking powder, cinnamon, ginger, and salt.
  2. In a medium-sized bowl, whisk the eggs, milk, and maple syrup. Pour the egg mixture into the flour mixture and stir to combine. Stir in the grated apples and pecans.
  3. Heat a nonstick or cast-iron skillet over medium heat or a griddle to 375 degrees. Lightly coat the skillet with cooking spray.
  4. Using a ¼-cup measuring cup, scoop the batter into the skillet, a few pancakes at a time. When pancakes start to bubble on top, flip and cook until the pancakes are cooked all the way through. Repeat with the remaining batter to make around 20 pancakes.
  5. Serve your pancakes with maple syrup and whatever fresh fruit you love!
